In dent kernels, soft (floury) starch sits in the centre and crown while hard (flinty) starch lines the sides. As the kernel dries, the soft starch in the middle shrinks more, creating the typical dent on top.

Because of its high yield potential, dent maize is the type most widely grown worldwide for grain, feed and industry. Its larger share of soft starch makes it easier to grind and to digest for livestock.
